Durian Puddings

300g fresh durian (scoop out the flesh)
2 tbsp caster sugar
200ml coconut milk
1 pc screwpint leaves (tie to knot)
2 tbsp flour (mix with water, stir till no lump)
1 tsp durian essence

Method:
  1. Heat in low fire. Pour coconut milk, sugar, screwpine leaves & flour in a pot.
  2. Stir continuosly, add essence. Continue to stir till thicken.
  3. Add in the durian, stir again about 15mins. Off fire.
  4. Transfer the mixture in a bowl .
  5. Arrange dessert glasses or small bowl. Pour the mixture into it.
  6. Keep cool in the fridge about 2hrs & garnish with mint leaves.
