Durian Delights

500g fresh durian (scoop out the flesh)
500ml fresh cream
sugar to taste
200g roasted shredded almonds
1 sprig mint leaves

Method:
  1. In a mixer, beat cream & sugar till fluffy.
  2. Fold in the durian & divide into dessert glasses or small bowl
  3. Keep cool in the fridge about 2hrs.
  4. When serving, sprinkle with almonds & mint leaves.
