150g cold butter
1 egg yolk
2 tbsp squeeze lemon juice
2 tbsp olive oil
2 onion (diced)
3 tbsp grated garlic
salt to taste
1 tsp white pepper
150g spinach (chopped)
125g ricotta cheese
2 eggs
150ml cream
100ml milk
Method:
- In a mixing bowl, rub the flour together with butter, egg, lemon juice & knead the dough till smoothly.
- Cover & keep cool in the fridge about an hour.
- Roll the dough & lift it, onto a pastry flan… which already brush with butter.
- Bake about 10mins & keep aside.
- In a bowl, mix the eggs, cream, milk thoroughly & keep aside.
- Heat in medium fire, pour oil in a wok, stir in the garlic, onion till fragrance.
- Add in the salt to taste & pepper, lastly add the spinach, cook about 10mins.
- In each pastry, pour in the spinach, sprinkle with cheese & pour the milk mixture.
- Bake till crispy brown about 30mins.
