Lobster Bisque

300g fresh lobster (trim out the flesh & slice the meat / use the shell for stock)
2 onion
5 clove of garlic
2" ginger
2 pcs bay leaves
1 carrot (diced)
500ml lobster stocks or more (depending how many pax)
10ml low-fat milk
salt & pepper to taste
50g fried shallots
1 sprig spring onion (sliced)
1 spring celery (sliced)
2 tbsp oil
1 litre water

Method:
  1. Heat in medium fire, brew the lobster shell together with 1 litre water about 1hr.
  2. Strain the stock & keep aside.
  3. In a pot, pour in the oil & saute the onion, garlic, ginger & bay leaves till fragrance.
  4. Stir in the salt & pepper to taste together with the stock. Boil about 10mins.
  5. Add in the diced carrot & lobster meat, stir continuosly.
  6. Lastly pour the milk & boil another 5mins.
  7. Off the fire. Garnish with celery, spring onion & fried shallots
  8. Serve with french loaf or garlic bread.
