2 onion
5 clove of garlic
2" ginger
2 pcs bay leaves
1 carrot (diced)
500ml lobster stocks or more (depending how many pax)
10ml low-fat milk
salt & pepper to taste
50g fried shallots
1 sprig spring onion (sliced)
1 spring celery (sliced)
2 tbsp oil
1 litre water
Method:
- Heat in medium fire, brew the lobster shell together with 1 litre water about 1hr.
- Strain the stock & keep aside.
- In a pot, pour in the oil & saute the onion, garlic, ginger & bay leaves till fragrance.
- Stir in the salt & pepper to taste together with the stock. Boil about 10mins.
- Add in the diced carrot & lobster meat, stir continuosly.
- Lastly pour the milk & boil another 5mins.
- Off the fire. Garnish with celery, spring onion & fried shallots
- Serve with french loaf or garlic bread.
