Oxtail Soup

1kg oxtail (cut small pcs)
2 ltr jug water
1 carrot (cut small cubes)
2 potatoes (cut small cubes)
2 tomatoes (cut 6)
2 cinnamon sticks
2 star anises
$2 soup paste
2 onions ]
5 garlics ]
2inch ginger ] pound till fine
salt to taste
1 tbsp white pepper
1 sprig spring onion
1 sprig celery
50g fried shallots

Method:
  1. Brew oxtail with water till the meat tender.
  2. Strain the meat from the stock, keep aside.
  3. In a pot, pour the stock… together with cinnamon, anise, white pepper & onion mixture.
  4. Stir continuously, adds in the oxtail, soup paste, potatoes, carrots.
  5. Brew for another 30mins, add in the salt… stir again, lastly add the tomatoes
  6. Off the heat. serve garnish with spring onion, celery & fried shallots
