2 ltr jug water
1 carrot (cut small cubes)
2 potatoes (cut small cubes)
2 tomatoes (cut 6)
2 cinnamon sticks
2 star anises
$2 soup paste
2 onions ]
5 garlics ]
2inch ginger ] pound till fine
salt to taste
1 tbsp white pepper
1 sprig spring onion
1 sprig celery
50g fried shallots
Method:
- Brew oxtail with water till the meat tender.
- Strain the meat from the stock, keep aside.
- In a pot, pour the stock… together with cinnamon, anise, white pepper & onion mixture.
- Stir continuously, adds in the oxtail, soup paste, potatoes, carrots.
- Brew for another 30mins, add in the salt… stir again, lastly add the tomatoes
- Off the heat. serve garnish with spring onion, celery & fried shallots
