Berries Ice-Cream

200g strawberries (cut half)
200g raspberries (cut half)
100ml sparkling apple or grape juices
50g brown sugar
salt to taste
100g roasted granola
100g roasted shredded almonds
100g chocolate chips
few pieces chocolate mint stick
few pieces thin waffles
1 sprig mint leaves
1 tub vanilla ice-cream

Method:
  1. Heat in low fire. Pour all the berries, juices in a pot, simmer till berries half soft.
  2. Sprinkle with sugar till it become caramel. Off the fire. Transfer into a bowl & keep cool about 1hr in the fridge.
  3. Scoop ice-cream into a dessert glass or small bowl. Pour 2 tbsp berries sauce.
  4. Sprinkle with granola, almonds & choc chips.
  5. Garnish with mint stick, mint leaves & waffles.
